Food Preservation

Preservation of Colour: Phosphate blends have excellent preservation properties, which ensure a longer shelf life and prevent natural taste and colour from being altered.  Preservation of texture and flavour: MRA treatment can preserve the fresh flavour of seafood and its glossy blue-white texture. Preservation of Nutrients: Seafood can be preserved with MRAs by extending their shelf life, thereby preserving the essential nutrients that are lost in cold storage. In processed seafood, residue levels of P205/E-500/Citrates are being controlled using phosphate and non-phosphate blends. Product: Gusto, Pearl Preserving processed food extends its shelf life: New food trends require long shelf lives for processed foods. Food is preserved over a longer period of time by adding sodium metabisulphite, which creates a layer of SO2 over it, so spoilage and microorganism growth are controlled.

Cheese Processing

Regulation PH: Processed cheese's consistency is determined by its pH value. Blends of phosphate can help control pH.

Emulsification is essential for controlling cheese firmness. As an emulsifying agent, phosphate blends can control the texture and firmness of cheese when they are used in cheese processing.

Ion Exchange Property: Ion exchange properties of phosphates translate into consistently spreadable and longer-lasting cheese.

Moisture Retention

In processed meat products, phosphate blends increase muscle protein solubility, thus increasing meat's water holding capacity and binding strength. 

Freshness and juiciness of seafood can be maintained for longer periods of time by treating it with Moisture Retention Agents

Wine Oxidation

A potassium metabisulphite additive is included in nearly all wine kits. By slowing down the aging process, or oxidation, the process is slowed. The potassium metabisulphite also serves as a stabilizer by removing oxygen from food and preventing spoilage. Additionally, a wine's flavor and color are preserved this way.

Anti-melanosis

Fresh seafood is an exquisite delicacy that is served to customers only when it is at its peak of freshness.

A seafood lover delights in the fact that the color pigments of fish remain unaltered after addition of sodium metabisulphite (anti-melanosis).

Pastry Relaxant

It is important that a bakery product is soft & retains the taste of all of the ingredients used in the baking process.

As a pastry relaxant, sodium metabisulphite can be added to the initial dough during preparation. It acts as a compound improver & helps to retain the taste after baking.

Degumming

Degumming edible oils is achieved with phosphoric acid. The device is used to separate gums, phospholipids, proteins, etc., which are insoluble in oil when hydrated.

A result of their emulsifying action, phospholipids reduce oil losses during alkali refining. Impurities in gum also cause oil to discolor when heated.
